One of the most important ingredients in Cajun cooking is seasoning. However, so many people think that ready to use seasonings like Tony Chachere’s is the way to go. I disagree. Ready made Cajun or Creole seasonings are mostly salt and if you aren’t careful using them, can ruin a dish.
I like to make my own, because I can control what is in it.
Place the following in a ziploc bag, seal and shake until completely combined:
1/4 cup of salt. I prefer sea salt, but use whatever you like. 5 teaspoons of garlic powder, 5 teaspoons of onion powder, 1 teaspoon of cayenne pepper, 3 teaspoons of black pepper, 4 teaspoons of chili powder and 2 teaspoons of paprika.
Keep this in a sealed container and use in the place of “salt” in your dishes.
